Description

A delicious combination of shrimp and lasagna in a creamy scampi sauce.


Ingredients

  • 9 lasagna noodles
  • 1 lb shrimp, peeled and deveined
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 1/4 cup butter
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a pan, melt butter over medium heat. Add garlic and sauté until fragrant.
  4. Add shrimp to the pan and cook until pink.
  5. Pour in white wine and lemon juice. Simmer for 2-3 minutes.
  6. In a baking dish, layer noodles, ricotta, shrimp mixture, and mozzarella. Repeat layers.
  7. Top with Parmesan cheese.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Garnish with parsley before serving.

Notes

  • Let the lasagna sit for 10 minutes before slicing.
  • You can substitute shrimp with chicken if preferred.
  • Make sure to use large shrimp for better texture.
