A delicious combination of shrimp and lasagna in a creamy scampi sauce.
Ingredients

- 9 lasagna noodles
- 1 lb shrimp, peeled and deveined
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1/4 cup butter
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a pan, melt butter over medium heat. Add garlic and sauté until fragrant.
- Add shrimp to the pan and cook until pink.
- Pour in white wine and lemon juice. Simmer for 2-3 minutes.
- In a baking dish, layer noodles, ricotta, shrimp mixture, and mozzarella. Repeat layers.
- Top with Parmesan cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Garnish with parsley before serving.
Notes
- Let the lasagna sit for 10 minutes before slicing.
- You can substitute shrimp with chicken if preferred.
- Make sure to use large shrimp for better texture.
