Description
A refreshing shrimp and cucumber salad that’s easy to prepare.
Ingredients

- 1 pound shrimp, peeled and deveined
- 2 cups cucumbers, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Boil shrimp in salted water until pink, about 3-4 minutes.
- Drain and cool the shrimp.
- In a bowl, combine shrimp, cucumbers, red onion, and cilantro.
- In a separate bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour dressing over salad and toss gently.
- Chill for 30 minutes before serving.
