- 2 cans shoepeg corn, drained
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup butter, melted
- 1 cup crushed crackers
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the drained shoepeg corn, sour cream, and melted butter.
- Add the shredded cheddar cheese, salt, and pepper. Mix well.
- Transfer the mixture to a greased baking dish.
- Top with crushed crackers.
- Bake for 30-35 minutes or until golden brown.
Notes
- Let it cool for a few minutes before serving.
- This dish is great for potlucks.
- You can add diced jalapeños for a spicy kick.
