Description

A simple recipe for mini meatloaf cooked on a sheet pan with roasted potatoes.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into small loaves and place them on a sheet pan.
  4. In another bowl, toss halved potatoes with olive oil, rosemary, salt, and pepper.
  5. Arrange the potatoes around the meatloaves on the sheet pan.
  6. Bake for 25-30 minutes until the meatloaves are cooked through and potatoes are tender.

Notes

  • Adjust cooking time for larger or smaller meatloaves.
  • Try different seasonings for the potatoes.
