Description
A simple recipe for mini meatloaf cooked on a sheet pan with roasted potatoes.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup ketchup
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp dried rosemary
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper.
- Form the mixture into small loaves and place them on a sheet pan.
- In another bowl, toss halved potatoes with olive oil, rosemary, salt, and pepper.
- Arrange the potatoes around the meatloaves on the sheet pan.
- Bake for 25-30 minutes until the meatloaves are cooked through and potatoes are tender.
Notes
- Adjust cooking time for larger or smaller meatloaves.
- Try different seasonings for the potatoes.
- Leftovers can be stored in the fridge for up to 3 days.
