Ingredients

  • 4 chicken thighs
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix melted butter, garlic, paprika, salt, and pepper.
  3. Place chicken thighs on a sheet pan and brush with the garlic butter mixture.
  4. In a separate bowl, toss broccoli, carrots, and bell peppers with olive oil, salt, and pepper.
  5. Spread the vegetables around the chicken on the sheet pan.
  6. Bake for 25-30 minutes or until chicken is cooked through and veggies are tender.
  7. Let it rest for 5 minutes before serving.
