Delicious shamrock pancakes topped with a refreshing minty drizzle.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup powdered sugar
- 2 tablespoons milk (for drizzle)
Instructions
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients. Stir in chopped mint leaves.
- Heat a non-stick skillet over medium heat.
- Pour 1/4 cup batter for each pancake. Cook until bubbles form, then flip.
- For the drizzle, mix powdered sugar and milk until smooth.
- Serve pancakes drizzled with minty sauce.
Notes
- Use fresh mint for best flavor.
- Adjust the thickness of the drizzle with more or less milk.
- These pancakes can be made ahead and reheated.
