Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients. Stir in chopped mint leaves.
  4. Heat a non-stick skillet over medium heat.
  5. Pour 1/4 cup batter for each pancake. Cook until bubbles form, then flip.
  6. For the drizzle, mix powdered sugar and milk until smooth.
  7. Serve pancakes drizzled with minty sauce.
