- 4 slices of bread
- 2 tablespoons olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can (14 oz) diced tomatoes
- 4 eggs
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and bell pepper, sauté until softened.
- Stir in garlic, cumin, and paprika, cook for 1 minute.
- Add diced tomatoes, simmer for 10 minutes.
- Create wells in the sauce and crack eggs into each well.
- Cover pan and cook until eggs are set.
- Meanwhile, toast the bread.
- Serve shakshouka over toast, sprinkle with feta and parsley.
