- 1 whole turkey (12–14 pounds)
- 1/4 cup olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 lemon, halved
- 1 onion, quartered
Instructions
- Preheat your oven to 325°F (165°C).
- Rinse the turkey under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
- Rub the seasoning mixture all over the turkey, including under the skin.
- Stuff the cavity with lemon halves and onion quarters.
- Place the turkey on a roasting rack in a roasting pan.
- Roast the turkey for about 13-15 minutes per pound.
- Check the internal temperature; it should reach 165°F (74°C) in the thickest part.
- Let the turkey rest for 20-30 minutes before carving.

- Use a meat thermometer for accurate cooking.
- Allow the turkey to come to room temperature before roasting.
