Ingredients

  • 9 lasagna noodles
  • 2 cups shrimp, peeled and deveined
  • 2 cups scallops
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 3 cups spinach, fresh
  • 2 cups heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a pan, heat olive oil and sauté garlic until fragrant.
  4. Add shrimp and scallops, cooking until opaque.
  5. Stir in spinach and cook until wilted.
  6. In a bowl, mix ricotta, half of the mozzarella, and half of the Parmesan cheese.
  7. Layer in a baking dish: noodles, seafood mixture, cheese mixture, and cream.
  8. Repeat layers, finishing with noodles and remaining cream.
  9. Top with remaining mozzarella and Parmesan.
  10. Bake for 30-35 minutes until golden and bubbly.
