- 4 boneless chicken breasts
- 1 cup roasted red peppers, chopped
- 2 cups fresh spinach
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice each chicken breast to create a pocket.
- In a bowl, mix roasted red peppers, spinach, and mozzarella.
- Stuff each chicken breast with the mixture.
- Season the outside of the chicken with olive oil, garlic powder, onion powder, salt, and pepper.
- Place the stuffed chicken in a baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Let it rest before serving.
