Description

The Savory Ratatouille Tart is a delightful dish that combines vibrant flavors of fresh vegetables in a flaky pastry shell, making it a perfect choice for a light meal or an elegant appetizer.

Ingredients

  • Puff pastry: 1 sheet, thawed if frozen.
  • Zucchini: 1 medium, thinly sliced.
  • Eggplant: 1 medium, thinly sliced.
  • Bell peppers: 1 (any color), thinly sliced.
  • Tomatoes: 2 medium, thinly sliced.
  • Garlic: 2 cloves, minced.
  • Fresh thyme: 1 tablespoon, chopped (or 1 teaspoon dried thyme).
  • Olive oil: 3 tablespoons.
  • Salt and pepper: to taste.

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface and transfer it to the tart pan, trimming any excess.
  3. Prick the bottom of the pastry with a fork to prevent puffing.
  4. In a large bowl, combine the sliced zucchini, eggplant, bell peppers, tomatoes, minced garlic, chopped thyme, olive oil, salt, and pepper. Toss until well coated.
  5. Layer the seasoned vegetables in the pre-baked tart shell, starting from the outer edge and working towards the center.
  6. Bake the tart in the preheated oven for 25-30 minutes until the vegetables are tender and the pastry is golden brown.
  7. Let the tart cool for a few minutes before slicing and serving warm or at room temperature.

Notes

  • Feel free to customize with optional ingredients like cheese, mushrooms, or different herbs.
  • Use seasonal vegetables for the best flavor.
  • Store leftovers in the refrigerator for up to 3 days.
