Ingredients
- Whole chicken: A 4-5 lbs (1.8-2.3 kg) chicken
- Olive oil: 1/4 cup (60 ml)
- Garlic: 4 cloves, minced
- Fresh rosemary: 2 tablespoons, chopped
- Fresh thyme: 2 tablespoons, chopped
- Lemon: One lemon, halved
- Salt: 1 tablespoon
- Black pepper: 1 teaspoon
Instructions
- Remove the chicken from its packaging and pat it dry with paper towels.
- In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create the herb marinade.
- Rub the herb mixture all over the chicken, including under the skin, and squeeze half a lemon over it.
- Preheat the oven to 425°F (220°C) and prepare the roasting pan with vegetables if desired.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, checking the internal temperature at the thickest part of the thigh (should reach 165°F or 75°C).
- Let the chicken rest for 15-20 minutes before carving and serving.
