Ingredients

- 2 cups long-grain rice
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic; sauté until softened.
- Stir in the rice and cook for 2 minutes.
- Add vegetable broth, thyme, rosemary, parsley, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 18-20 minutes until rice is tender and liquid is absorbed.
- Fluff with a fork before serving.
Notes
- Use fresh herbs for more flavor if available.
- This rice pairs well with grilled meats and vegetables.
- Store leftovers in an airtight container in the fridge.
