Ingredients

- 1 lb ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 lbs potatoes, peeled and cubed
- 1/4 cup butter
- 1/4 cup cream
- 2 tbsp truffle oil
Instructions
- Preheat your oven to 350°F.
- In a skillet, heat olive oil and caramelize the onions until golden brown.
- In a bowl, mix ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper.
- Add half of the caramelized onions to the meat mixture and combine.
- Shape the mixture into a loaf and place it in a baking dish.
- Top the meatloaf with the remaining onions.
- Bake for 1 hour or until cooked through.
- Meanwhile, boil potatoes until tender, then drain.
- Mash the potatoes with butter, cream, and truffle oil until smooth.
- Serve meatloaf with truffle mashed potatoes on the side.
Notes

- Let the meatloaf rest for 10 minutes before slicing.
