Description

A delicious savory meatloaf topped with caramelized onions and served with truffle mashed potatoes.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup cream
  • 2 tbsp truffle oil

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet, heat olive oil and caramelize the onions until golden brown.
  3. In a bowl, mix ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper.
  4. Add half of the caramelized onions to the meat mixture and combine.
  5. Shape the mixture into a loaf and place it in a baking dish.
  6. Top the meatloaf with the remaining onions.
  7. Bake for 1 hour or until cooked through.
  8. Meanwhile, boil potatoes until tender, then drain.
  9. Mash the potatoes with butter, cream, and truffle oil until smooth.
  10. Serve meatloaf with truffle mashed potatoes on the side.
