Ingredients
- Breakfast sausage: 1 pound (450 grams)
- Fresh spinach: 4 cups, chopped
- Eggs: 8 large
- Milk: 1 cup (240 ml)
- Cheese: 2 cups, shredded (cheddar or your choice)
- Bread: 4 cups, cubed (preferably day-old)
- Salt: 1 teaspoon
- Pepper: 1/2 teaspoon
- Olive oil: 1 tablespoon (for cooking)
Instructions
- Prep the ingredients by chopping spinach and cubing the bread.
- Cook the breakfast sausage in a skillet until browned and fully cooked.
- Sauté the chopped spinach in the same skillet until wilted.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper.
- Assemble the casserole by layering bread, sausage and spinach mixture, and cheese in a greased baking dish.
- Pour the egg mixture over the casserole and top with remaining cheese.
- Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden brown and set.
Notes
- Can be made ahead of time and stored in the refrigerator.
