Ingredients

  • Breakfast sausage: 1 pound (450 grams)
  • Fresh spinach: 4 cups, chopped
  • Eggs: 8 large
  • Milk: 1 cup (240 ml)
  • Cheese: 2 cups, shredded (cheddar or your choice)
  • Bread: 4 cups, cubed (preferably day-old)
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Olive oil: 1 tablespoon (for cooking)

Instructions

  1. Prep the ingredients by chopping spinach and cubing the bread.
  2. Cook the breakfast sausage in a skillet until browned and fully cooked.
  3. Sauté the chopped spinach in the same skillet until wilted.
  4. In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  5. Assemble the casserole by layering bread, sausage and spinach mixture, and cheese in a greased baking dish.
  6. Pour the egg mixture over the casserole and top with remaining cheese.
  7. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden brown and set.
