Ingredients
- Breakfast sausage: 1 lb (450 g), casings removed
- Diced potatoes: 2 cups (about 300 g), small cubes
- Bell peppers: 1 cup (150 g), diced
- Onions: 1 medium (about 150 g), diced
- Eggs: 4 large
- Salt and pepper: to taste
- Olive oil: 2 tablespoons (30 ml)
Instructions
- Prepare all ingredients by washing and dicing the potatoes, chopping the bell peppers and onions, and removing casings from the sausage.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and add the diced potatoes. Season with salt and pepper, cooking for about 10-12 minutes until golden brown and tender.
- Add the breakfast sausage to the skillet, breaking it into small pieces, and cook for about 5-7 minutes until browned and fully cooked.
- Add the diced bell peppers and onions to the skillet, stirring everything together and cooking for an additional 5 minutes.
- Whisk the eggs with a pinch of salt and pepper, push the sausage and vegetable mixture to one side of the skillet, and pour the eggs into the empty side. Scramble the eggs until cooked through, then mix everything together and adjust seasoning if needed.
