Ingredients

- 2 cups fresh tomatillos, husked and rinsed
- 1/2 cup onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1–2 jalapeños, chopped (to taste)
- 1 tablespoon lime juice
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place tomatillos on a baking sheet and roast for 15-20 minutes until softened.
- Let tomatillos cool slightly, then blend with onion, cilantro, jalapeños, lime juice, and salt until smooth.
- Taste and adjust seasoning if needed.
- Serve immediately or refrigerate for later use.
Notes
- For a spicier salsa, leave the seeds in the jalapeños.
- This salsa pairs well with tacos, grilled meats, or chips.
