- 1 cup salsa
- 2 cups cauliflower rice
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced chicken, cumin, garlic powder, salt, and pepper. Cook until chicken is browned.
- Stir in salsa and simmer for 5 minutes.
- Add cauliflower rice and mix well.
- Cook for an additional 5-7 minutes until cauliflower rice is tender.
- Garnish with fresh cilantro before serving.

- Adjust the spice level by choosing mild or hot salsa.
