Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 4 medium potatoes, diced
  • 3 large carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic, sauté until onion is translucent.
  5. Add carrots and potatoes, stir for a few minutes.
  6. Return chicken to the pot.
  7. Pour in chicken broth and add herbs.
  8. Season with salt and pepper.
  9. Bring to a boil, then reduce heat and simmer for 45 minutes.
  10. Remove herbs before serving.
