- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 4 cups beef broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Heat olive oil in a large pot over the campfire.
- Add beef and brown on all sides.
- Add onion and garlic, cook until soft.
- Add potatoes, carrots, and beef broth.
- Season with salt, pepper, and thyme.
- Cover and simmer for 1.5 hours or until meat is tender.

- Use a cast iron pot for best results.
- Let it cool slightly before serving.
