- 1 can (10 ounces) Rotel diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon garlic powder

- Salt and pepper to taste
Instructions
- Cook rotini pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add cooked pasta, Rotel tomatoes, and spices to the skillet. Stir to combine.
- Reduce heat to low and mix in sour cream and cheddar cheese.
- Cook until the cheese melts and everything is heated through.
- Season with salt and pepper to taste.
