Ingredients
- Velveeta cheese: 16 oz (1 package)
- Rotel tomatoes: 10 oz (1 can, diced with green chilies)
- Ground beef: 1 lb
- Jalapeños: 2 (fresh, diced, or 1 can if preferred)
- Onion: 1 small (finely chopped)
- Garlic powder: 1 teaspoon
- Salt: to taste
- Pepper: to taste
- Tortilla chips: for serving
Instructions
- Gather all your ingredients.
- Cut the Velveeta cheese into small cubes.
- In a large skillet, brown the ground beef over medium heat, seasoning with salt and pepper.
- Drain excess fat and set the beef aside. In the same skillet, sauté the chopped onion and diced jalapeños for 3-4 minutes.
- Return the cooked beef to the skillet, add the Rotel tomatoes and garlic powder, and mix well.
- Stir in the Velveeta cheese and cook until melted and creamy, about 5-7 minutes.
- Serve warm with tortilla chips.

- For a vegetarian version, omit the ground beef and add more vegetables.
