Description
Rotel dip is a creamy, spicy cheese dip made with tomatoes and green chilies.
Ingredients

- 1 can of Rotel tomatoes (10 oz)
- 1 lb of Velveeta cheese
- 1 lb of ground beef (optional)
- 1 tsp of chili powder
- 1/2 tsp of garlic powder
- 1/2 tsp of onion powder
- 1/4 tsp of salt
Instructions
- Brown the ground beef in a skillet over medium heat.
- Drain excess fat from the beef.
- Add Rotel tomatoes to the skillet.
- Cube Velveeta cheese and add to the skillet.
- Add chili powder, garlic powder, onion powder, and salt.
- Stir until the cheese melts and everything is combined.
- Serve warm with tortilla chips.
Notes
- Can substitute ground beef with sausage or keep it vegetarian.
- Adjust spice level by using mild or hot Rotel.
- Store leftovers in the refrigerator for up to 3 days.
