Description

Ingredients

  • 2 medium sweet potatoes, diced
  • 2 chicken breasts, cubed
  • 2 cups kale, chopped
  • 1 cup rice, uncooked
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. While sweet potatoes roast, cook rice according to package instructions.
  5. In a skillet, cook chicken over medium heat until golden brown and cooked through.
  6. Add kale to the skillet and sauté until wilted.
  7. Combine cooked rice, chicken, kale, and roasted sweet potatoes in bowls.
  8. Serve warm.
