Ingredients

- 2 medium sweet potatoes, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, chopped
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss diced sweet potatoes with olive oil, salt, pepper, and cumin.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine black beans, bell pepper, red onion, and cilantro.
- Add roasted sweet potatoes to the bowl.
- Drizzle with lime juice and toss gently to combine.
- Serve warm or chilled.
