Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/2 cup fresh basil leaves, chopped
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss strawberries with 2 tablespoons sugar and olive oil on a baking sheet.
  3. Roast strawberries for 20 minutes until soft.
  4. Let strawberries cool, then blend with lime juice, lime zest, and basil.
  5. In a bowl, whisk together heavy cream, milk, 3/4 cup sugar, and vanilla until sugar dissolves.
  6. Mix in the strawberry mixture.
  7. Chill the mixture in the refrigerator for 2 hours.
  8. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  9. Transfer the ice cream to a container and freeze for at least 4 hours.
