Description
A refreshing ice cream made with roasted strawberries, lime, and basil.
Ingredients

- 2 cups strawberries, hulled and halved
- 2 tablespoons sugar
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1/2 cup fresh basil leaves, chopped
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C).
- Toss strawberries with 2 tablespoons sugar and olive oil on a baking sheet.
- Roast strawberries for 20 minutes until soft.
- Let strawberries cool, then blend with lime juice, lime zest, and basil.
- In a bowl, whisk together heavy cream, milk, 3/4 cup sugar, and vanilla until sugar dissolves.
- Mix in the strawberry mixture.
- Chill the mixture in the refrigerator for 2 hours.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the ice cream to a container and freeze for at least 4 hours.
Notes
- Use fresh strawberries for the best flavor.
- Adjust sugar based on the sweetness of strawberries.
- For a stronger basil flavor, increase the amount of basil.
