Description

Juicy chicken breasts stuffed with roasted red peppers, fresh spinach, and mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix roasted red peppers, spinach, and mozzarella.
  3. Slice a pocket into each chicken breast.
  4. Stuff the chicken with the mixture.
  5. Season the chicken with garlic powder, Italian seasoning, salt, and pepper.
  6. Heat olive oil in a skillet over medium heat.
  7. Brown the chicken on both sides for 4-5 minutes.
  8. Transfer the chicken to a baking dish and bake for 25-30 minutes.
  9. Check that the chicken is cooked through.
