- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix roasted red peppers, spinach, and mozzarella.
- Slice a pocket into each chicken breast.
- Stuff the chicken with the mixture.
- Season the chicken with garlic powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Brown the chicken on both sides for 4-5 minutes.
- Transfer the chicken to a baking dish and bake for 25-30 minutes.
- Check that the chicken is cooked through.
Notes
- Use fresh spinach for best flavor.
- Allow chicken to rest for a few minutes before slicing.
