- 2 cups baby potatoes, halved
- 2 cups broccoli florets
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potatoes and broccoli with olive oil, garlic powder, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 20 minutes.
- Sprinkle parmesan cheese over the vegetables.
- Return to the oven and roast for an additional 10-15 minutes until golden and crispy.
