Creamy roasted garlic cheddar cauliflower soup.
Ingredients

- 1 head cauliflower, chopped
- 1 bulb garlic, roasted
- 4 cups vegetable broth
- 1 cup sharp cheddar cheese, shredded
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Drizzle chopped cauliflower and garlic with olive oil, season with salt and pepper.
- Roast in oven for 25-30 minutes until golden.
- In a pot, sauté onion until translucent.
- Add roasted cauliflower and garlic to pot.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Blend until smooth and return to pot.
- Stir in cheddar cheese until melted.
- Serve hot.
Notes
- Adjust seasoning as desired.
- You can use other cheese varieties.
- Top with croutons for added texture.
