Description

Creamy roasted garlic cheddar cauliflower soup.


Ingredients

  • 1 head cauliflower, chopped
  • 1 bulb garlic, roasted
  • 4 cups vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drizzle chopped cauliflower and garlic with olive oil, season with salt and pepper.
  3. Roast in oven for 25-30 minutes until golden.
  4. In a pot, sauté onion until translucent.
  5. Add roasted cauliflower and garlic to pot.
  6. Pour in vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Blend until smooth and return to pot.
  9. Stir in cheddar cheese until melted.
  10. Serve hot.
