Ingredients

  • 2 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1/2 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine melted butter, minced garlic, salt, and pepper.
  3. Add halved potatoes to the bowl and toss until well coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes until golden brown and tender.
  6. Remove from the oven and sprinkle with parmesan cheese.
  7. Return to the oven for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.
