Ingredients

- 2 lbs baby potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup unsalted butter, melted
- 1/2 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine melted butter, minced garlic, salt, and pepper.
- Add halved potatoes to the bowl and toss until well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes until golden brown and tender.
- Remove from the oven and sprinkle with parmesan cheese.
- Return to the oven for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Use any variety of baby potatoes.
- Adjust garlic and parmesan to your preference.
- Store leftovers in an airtight container in the fridge.
