Ingredients

- 1 whole chicken (about 4–5 lbs)
- 1 head of garlic, cloves separated and peeled
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 1 lemon, halved
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- In a bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin.
- Stuff the cavity with lemon halves and remaining garlic cloves.
- Place the chicken in a roasting pan.
- Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
Notes
- You can add vegetables like potatoes and carrots to the roasting pan for a complete meal.
- Adjust herbs according to your preference.
