Ingredients

  • 1 whole chicken (about 45 lbs)
  • 1 head of garlic, cloves separated and peeled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 lemon, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. In a bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, and pepper.
  4. Rub the mixture all over the chicken, including under the skin.
  5. Stuff the cavity with lemon halves and remaining garlic cloves.
  6. Place the chicken in a roasting pan.
  7. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10 minutes before carving.

Notes

  • You can add vegetables like potatoes and carrots to the roasting pan for a complete meal.
