Description

- 1 butternut squash, peeled and cubed
- 1 cup cranberries, fresh or dried
- 1 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the butternut squash with olive oil, salt, and pepper in a large bowl.
- Spread the squash on a baking sheet in a single layer.
- Roast for 25-30 minutes or until tender.
- Remove from the oven and add cranberries.
- Sprinkle feta cheese over the top and return to the oven for 5 minutes.
- Serve warm.
