Description

Ingredients

  • 1 cup beef broth
  • 1 onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Brown the roast on all sides.
  3. Place the chopped onion, garlic, carrots, and potatoes in the crockpot.
  4. Add the browned roast on top of the vegetables.
  5. Pour beef broth over the roast.
  6. Season with salt, pepper, and thyme.
  7. Cover and cook on low for 8 hours or high for 4 hours.

Notes

  • Adjust cooking time based on the size of the roast.
  • You can add other vegetables like peas or corn.
