Ingredients

- 2 cups rice
- 4 cups water
- 1 tablespoon salt
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup peas
- 1 teaspoon black pepper
Instructions
- Rinse the rice under cold water.
- In a pot, bring water to a boil and add salt.
- Add the rice and reduce heat to low.
- Cover and simmer for 18 minutes.
- In a skillet, heat olive oil and sauté onion and garlic.
- Add bell pepper and peas, cooking until tender.
- Fluff cooked rice and mix with sautéed vegetables.
- Season with black pepper and serve.
