Ingredients

- 1 ribeye roast (3–4 pounds)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the ribeye roast.
- Place the roast on a rack in a roasting pan.
- Roast in the oven for 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for at least 15 minutes before slicing.
