- 1 bone-in rib roast (5–7 pounds)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
Instructions
- Preheat your oven to 450°F (230°C).
- In a bowl, mix garlic, olive oil, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the rib roast.
- Place the roast in a roasting pan with the rib side down.
- Roast for 20 minutes, then reduce the temperature to 325°F (160°C).
- Continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.
- Remove from the oven and let it rest for 20-30 minutes before slicing.
