- 1 bone-in rib roast (5–7 pounds)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 teaspoons rosemary, chopped
- 2 teaspoons thyme, chopped
Instructions
- Preheat the oven to 450°F (230°C).
- In a bowl, mix garlic, olive oil, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the rib roast.
- Place the roast on a rack in a roasting pan.
- Roast in the oven for 15 minutes.
- Reduce the temperature to 325°F (165°C) and continue cooking for 1.5 to 2 hours.
- Check the internal temperature for desired doneness (130°F for medium-rare).
- Remove from the oven and let rest for 20 minutes before slicing.
