- 1 rib roast (4–6 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (230°C).
- Rub the rib roast with olive oil, salt, and pepper.
- In a small bowl, mix garlic, rosemary, and thyme.
- Spread the herb mixture over the roast.
- Place the roast in a roasting pan, bone side down.
- Roast for 20 minutes, then reduce the temperature to 325°F (165°C).
- Continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Let the roast rest for 15-20 minutes before slicing.
