- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
Instructions
- Preheat the oven to 450°F (232°C).
- Rub the rib roast with olive oil.
- Mix garlic, salt, pepper, rosemary, and thyme in a bowl.
- Coat the roast with the seasoning mixture.
- Place the roast in a roasting pan.
- Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches your desired doneness.
- Let the roast rest for 15-20 minutes before slicing.
Notes
- For medium-rare, aim for 130-135°F (54-57°C).
- Adjust cooking time based on the weight of the roast.
- Use a meat thermometer for accuracy.
