Description

Reese’s Cheesecake is a delightful dessert that combines the creamy richness of cheesecake with the irresistible flavor of peanut butter and chocolate, topped with chocolate ganache and chopped Reese’s peanut butter cups.


Ingredients

  • Cream cheese: 450 grams (16 oz), softened
  • Granulated sugar: 200 grams (1 cup)
  • Eggs: 3 large
  • Vanilla extract: 1 teaspoon
  • Sour cream: 240 grams (1 cup)
  • Crushed graham crackers: 150 grams (1 ½ cups)
  • Unsalted butter: 75 grams (5 tablespoons), melted
  • Reese’s peanut butter cups: 200 grams (about 10 cups), chopped
  • Semi-sweet chocolate chips: 150 grams (1 cup)
  • Heavy cream: 120 ml (½ cup)

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Combine crushed graham crackers and melted butter, then press into the bottom of a 23 cm (9-inch) springform pan and bake for 8-10 minutes.
  3. In a large mixing bowl, beat softened cream cheese until smooth, then gradually add granulated sugar.
  4. Add eggs one at a time, mixing on low speed, then add vanilla extract and sour cream, mixing until smooth.
  5. Gently fold in chopped Reese’s peanut butter cups.
  6. Pour the cheesecake filling over the cooled crust and bake for 50-60 minutes until edges are set and center is slightly jiggly.
  7. Let the cheesecake cool in the oven for about 1 hour, then refrigerate for at least 4 hours or overnight.
  8. Prepare the ganache by heating heavy cream and chocolate chips until melted and smooth, then pour over the chilled cheesecake.
  9. Decorate with additional chopped Reese’s peanut butter cups before serving.
