Instructions

  1. Preheat your oven to 350°F (175°C).

  3. In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla.
  4. Mix wet and dry ingredients until just combined.
  5. Fill muffin cups with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let muffins cool.
  8. In a bowl, mix cream cheese and powdered sugar until smooth.
  9. Frost cooled muffins with cream cheese mixture.
