- 2 eggs

- 1/2 cup bell pepper, diced

- 1 tablespoon olive oil
Instructions
- In a bowl, mix cottage cheese, eggs, spinach, bell pepper, onion, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Pour the mixture into the skillet.
- Cook for 5-7 minutes until the edges start to set.
- Flip and cook for another 3-5 minutes until fully cooked.
- Serve warm.
