- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained
- 1 cup corn
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- In a bowl, mix black beans, corn, bell pepper, cumin, chili powder, and salt.
- Add cooked quinoa to the bowl and stir well.
- Serve topped with avocado slices and cilantro.
Notes
- This dish is great for meal prep.
- You can add other vegetables as desired.
- Store leftovers in the refrigerator for up to 3 days.
