Ingredients

  • 1 cup corn

  • Salt to taste
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until liquid is absorbed.
  4. In a bowl, mix black beans, corn, bell pepper, cumin, chili powder, and salt.
  5. Add cooked quinoa to the bowl and stir well.
  6. Serve topped with avocado slices and cilantro.
