Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh raspberries
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, butter, powdered sugar, and salt until crumbly.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake for 15 minutes or until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest.
- Gently fold in the raspberries.
- Pour the raspberry mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Let cool completely before dusting with powdered sugar and cutting into squares.
Notes
- Store in the refrigerator for up to a week.
- Use frozen raspberries if fresh ones are not available.
- For a stronger lemon flavor, add more lemon zest.
