Description

A nutritious and flavorful quinoa power bowl featuring roasted Brussels sprouts, maple chipotle sauce, and squash.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon chipotle sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse quinoa under cold water.
  3. In a pot, bring vegetable broth to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.
  4. Toss Brussels sprouts and squash with olive oil, salt, and pepper on a baking sheet.
  5. Roast vegetables for 25-30 minutes until tender.
  6. In a small bowl, mix maple syrup and chipotle sauce.
  7. Once quinoa is cooked, fluff with a fork and mix in the sauce.
  8. Serve quinoa topped with roasted vegetables and garnish with cilantro.
