Ingredients

- 1 cup cooked quinoa
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix cooked quinoa, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, oil, eggs, and vanilla.
- Combine wet and dry ingredients.
- Pour the batter into a greased muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Store in an airtight container.
- Great for breakfast or snacks.
- Add chocolate chips or fruits for extra flavor.
