Description

Quinoa Black Bean Salad is a nutritious and colorful dish that combines quinoa, black beans, and fresh vegetables, all tossed in a zesty lime dressing.


Ingredients

  • Quinoa: 1 cup (uncooked)
  • Black beans: 1 can (15 oz), drained and rinsed
  • Cherry tomatoes: 1 cup, halved
  • Bell peppers: 1 cup, diced (any color)
  • Red onion: 1/2 cup, finely chopped
  • Fresh cilantro: 1/4 cup, chopped
  • Lime juice: 1/4 cup (freshly squeezed)
  • Olive oil: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Rinse the quinoa under cold water in a fine-mesh strainer.
  2. In a medium saucepan, combine 1 cup of rinsed quinoa with 2 cups of water, bring to a boil, then reduce heat and simmer for 15 minutes.
  3. While the quinoa cooks, rinse the black beans under cold water and let them drain.
  4. Chop the cherry tomatoes, bell peppers, red onion, and cilantro.
  5. In a large mixing bowl, combine the cooked quinoa, black beans, tomatoes, bell peppers, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
  7. Pour the dressing over the salad and toss gently to combine.
