Ingredients

  • 1 cup quinoa
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a large pot, sauté onion, garlic, and bell pepper until soft.
  3. Add quinoa, black beans, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Stir occasionally until quinoa is cooked and chili thickens.
  6. Serve warm and enjoy.
