A quick and easy recipe for delicious cranberry orange muffins that can be prepared in just 30 minutes.
Ingredients
- All-purpose flour: 2 cups (240 g)
- Granulated sugar: 3/4 cup (150 g)
- Baking powder: 2 teaspoons
- Salt: 1/2 teaspoon
- Orange zest: 1 tablespoon (from about 1 orange)
- Fresh cranberries: 1 cup
- Eggs: 2 large
- Milk: 1/2 cup (120 ml)
- Vegetable oil: 1/3 cup (80 ml)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, and orange zest.
- In another bowl, beat the eggs and then add the milk and vegetable oil, whisking until smooth.
- Pour the wet mixture into the dry ingredients and gently fold them together. Then, fold in the cranberries.
- Fill each muffin cup about 2/3 full with the batter.
- Bake the muffins for 18-20 minutes until golden brown and a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

- For a gluten-free option, use a gluten-free all-purpose flour blend.
- Substitute honey or maple syrup for sugar for a healthier alternative.
