Ingredients

- 1 cup brewed espresso
- 1/2 cup pumpkin puree
- 1/2 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- Brew the espresso and let it cool.
- In a bowl, mix pumpkin puree, mascarpone, sugar, vanilla, and pumpkin pie spice.
- In another bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream into the pumpkin mixture.
- Dip ladyfingers in espresso and layer in a dish.
- Add a layer of the pumpkin mixture over the ladyfingers.
- Repeat layers until ingredients are used up.
- Dust the top with cocoa powder.
- Refrigerate for at least 4 hours before serving.
Notes
- Adjust the sugar to taste.
- Use homemade or store-bought pumpkin puree.
- Let the tiramisu set overnight for best results.
