Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Brew the espresso and let it cool.
  2. In a bowl, mix pumpkin puree, mascarpone, sugar, vanilla, and pumpkin pie spice.
  3. In another bowl, whip heavy cream until stiff peaks form.
  4. Fold whipped cream into the pumpkin mixture.
  5. Dip ladyfingers in espresso and layer in a dish.
  6. Add a layer of the pumpkin mixture over the ladyfingers.
  7. Repeat layers until ingredients are used up.
  8. Dust the top with cocoa powder.
  9. Refrigerate for at least 4 hours before serving.
